Fermented in stainless steel tanks at 26°C per 15 days with daily pump over and delestage during it and even 7 days post-maceration. Vinification:
24 months in oak; 30% in 2-3 year old French oak tonneau, 80% in 4000 liters Moldavia oak casks. Maturation:
Ruby color. Aromas of varietal earthiness, red berries fruit and spicy. Ripe concentrate fruit with balanced smoky notes and good soft dry tannins balance. Drink now or cellar to 2014. Winemaker's notes:
chicken, roasted white meat and some light red meat. Ideal companion:
