The winemaker isn’t like a painter who draws on a white sheet of paper using brushes and tempera colors. He is more like a sculptor who has in front of a block of marble and knows that inside that stone there is already a work of art. An artwork that only needs to be liberated.

The interpretation begins with the main choice: what kind of variety to bed out on a soil and with which farming system. Then it carries on with the choice of prunings, yields, the point of maturation one wishes for. Everything must be functional for the winemaker’s enological goal and that will then guide every choice.
