whole bunches hand picked soft pressing with cool fermentation 14-16°C with 100% malolactic fermentation then blended and bottled for the secondary fermentation.
Vinification:
at least 60 months on yeast lees. Maturation:
Straw yellow color. Complex citrus, acacia and honey aromas with bread nuances. The palate is medium, with richness of baked bread and yeast, good balance between mineral acidity and the body with a persistent after taste.
